What is Tourlou Tourlou?
For years I thought that my mum had made words up to describe this dish, but I was wrong (don't tell her that though...)!
Tourlou Tourlou (Greek: Τουρλού Τουρλού) translates to "mixed up". So basically, it's a combination of your favourite vegetables which are all baked in the oven with a mixture of tomatoes, olive oil and herbs.
You could say it's similar to the French dish, Ratatouille, but more flexible with the vegetables that you use. The ingredients are limitless and depend on the size of your baking dish!
I can't say that I get excited about vegetarian (this one is actually vegan) dishes but Tourlou Tourlou is an exception! There is something so comforting about the soft roasted vegetables coated in that cinnamon scented aromatic tomato sauce.

I love to make this dish whenever I have to clean out the fridge when I have an abundance of seasonal vegetables.
MUST HAVE VEGETABLES (in my opinion):
Potatoes
Aubergine
Zucchini
Onions
Capsicum (not shown in this version)
MUST HAVE HERBS & SPICES:
Dried Greek Oregano
Fresh Dill
Bay Leaf
Cinnamon Stick
Tourlou Tourlou is not complete with out one very important ingredient. A generous amount of Extra Virgin Olive Oil!

Tourlou Tourlou can be eaten hot, room temperature or cold. Great served with lamb!

FAVOURITE WAY TO EAT: at room temperature on a thick slice of bread with feta and olives.

FAVOURITE SERVING SUGGESTIONS:
Toast a thick slice of continental bread, top with Tourlou Tourlou and sprinkle with feta
Add cooked chick peas, a handful of rocket and don't forget the feta for a delicious salad
Stir through some pitted homemade Kalamata olives, chopped parsley & feta
Great in sandwiches the next day for lunch, or in a wrap
