If you are looking for something more than tzatziki, taramosalata, hummus, skordalia we would like to introduce you to TIROKAFTERI (Greek τυροκαυτερή) - a dip made from feta, hot banana capsicums, yoghurt and olive oil.
If you search the internet there are so many variations of this dip and they use red capsicum, or chillies, however this is the recipe that I was taught and prefer.
For me, the feta and the mild heat from the capsicums are the flavours that I love. Red capsicums overpower the dip and you essentially have a roasted red capsicum dip, not a feta flavoured dip.
This recipe starts with roasting the banana capsicums and then placing them in a bowl, covered with cling film until they slightly cool. Remove the skins and the seeds.
Mash together with a fork feta, yoghurt, vinegar and capsicums and drizzle in olive oil until desired consistency is reached. When you mash the dip with a fork you control whether you want a textured or smooth dip. Refrigerate for at least 30 minutes before serving.
It's that simple!
