Spatchcock Chicken

For years I thought that 'spatchcock' referred to a breed of poultry. Some of Google say that it's a 3 week old chicken, whether this is true or not 🤷🏻♀️

What it means in culinary terms is a method of preparation of poultry - chicken, quail etc - by removing the back bone and flattening the bird down so that you have equal width which allows for quicker and more even cooking.
Lots of words, right?! So we made a video to show you how we spatchcock our chicken & roasted it.
STAGES OF THE SPATCHCOCK TECHNIQUE
Turn the chicken breast side down and with a sharp pair of scissors remove the backbone & wish bone.
Turn over and season well
Add herbs, garlic, lemon & olive oil and roast at 190C until golden and well cooked (cooking time varies depending on the size of your chicken) Internal temperature should be above 77C
