Spanakopita!

Σπανακὀπιτα...or Spinach Pie as it's known to the rest of the world! It's our favourite of all of the πἰτες (pies).


Every Greek γιαγιἀ (yiayia/grandmother) or μαμἀ (mama) have their own recipe for their signature pita. The fillings are limitless, however it's the homemade pastry which makes the pita perfect!


Spanakopita Spirals & Traditional Spanakopita. Let's EAT!

When I smell the spanakopita baking in the oven, and the aromas wafting through the house, it brings me back to all of the family celebrations where some sort of pita/pie was always served. Food memories are the best! 🥰

The art is in the making of the phyllo pastry and to make it as thin as possible. I've got to keep practicing... Yiayia Expert Level Phyllo Pastry makers can stretch the dough out so thin that it covers an entire dining table! Now that's a skill!!

Made from quite humble ingredients such as flour, olive oil, cheese and greens (which are mainly grown in the garden!) it's a tasty dish to serve to your family and friends.

You can make spanakopita, or any pita really, into spirals (as we've done here), triangles, or any shape really. Many people make trays of spanakopita and cut them into squares, or triangles to serve.

We like this spiral Spanakopita but you can make many different shapes.

Our recipe has butter, eggs and feta cheese, but Spanakopita can be adapted to include entirely plant-based ingredients to make it vegan.
