Let me clarify something before we start. The rest of the world may know Broad Beans as Fava, but Broad Beans are actually known as Koukia/Κουκια in Greek.
Today, we're going to highlight the legume Greek's call Fava/Φαβα, split peas, specifically yellow split peas.
There is a dish made in Greece, which is famous in Santorini, called...you guesses it...Fava.
Growing up I had never eaten Fava, mainly because my mother didn't make it. She related memories of eating Fava to funerals...no Fava for us growing up!
Yianni on the other hand is a self confessed long time eater of Fava and it is, hands down, his favourite of the legume recipes...and here's why!
Fava has literally 4 ingredients, but is inarguably one of the tastiest dishes.
You can't really call Fava a soup as it's quite thick...and it's not quite a dip...but you can surely eat it with a spoon or slather on bread.
If anybody knows Yianni, they know that he loves anything that you can slather on bread and call it a sandwich!
The picture below is how I prefer to eat my Fava , served with Pickled Red Onions, Capers topped with Crispy Pork Schnitzel, topped with Golden Cauliflower, drizzled with Extra Virgin Olive Oil and sprinkled with Smoked Paprika!
We have also used Green Split Peas for this recipe and it works really well too.
